Well I have a two year old daughter, but I'll think back about 8 months to when she was that old and tell you what she ate:When she wakes up she has a glass of milk and a vitamin chew sweet.
For Breakfast she would probably eat some cereal.
If she got hungry then before lunch I'd give her some sliced apple.
For Lunch she might have grilled cheese? Or
Then if she got hungry again there'd be any sort of fruit for her to eat if she wanted.
And then she'd pretty much have a smaller portion of whatever we were eating for dinner, so long as it wasn't possible for her to eat it. So that could be anything from pizza, pasta, stew, mashed potatoes, soup, ravioli, ratatouille, cauliflower cheese, scrambled eggs, mild curries - nothing too spicy for her. Maybe with a yoghurt for dessert.
Her favourite meal though was beans on toast. You don't really get people in the states eating this, but I'm british and moved over here when I was younger and it's really big over there. Beans on toast is amazing, you could actually live off it because it has every nutrition group in it.
Onto the questions
1. Kids need food which will support how much they are growing - for that they need a lot of protein (growth & repair), as well as the typical others, a little carbohydrates, and then your usual fats, and fibre, + the whole vitamins and minerals thing which you generally get from fruits and vegetables and beans and pulses anyway.
2. I don't really know the fat content or fibre content, but I'm sure that you can just search for on the internet in no time.

The official government line about healthy eating is summed up in the Food Pyramid.Take that with a grain of salt tho. Government guidelines are partially the result of pressure from various industry groups each blowing their own horns.
An example is the big emphasis on dairy products, specifically milk. There is no reason for this other than pressure from the dairy industry. Another is the statement "make half your grains whole." Why not "make all your grains whole?"

Studies show kids who have family dinners a couple of times a week are less likely to be delinquents.B) 1. Kids have afterschool activities that go over the dinner hour. 2. Parents have to work late. 3. Parents don't think family dinners are important. 4. People don't cook, kids just grab ready-made food when they're hungry.
