The headband doctors used to carry around the head, with a speculum (a circular mirror with a circular hole in the center) was called "endoscope", because with it, you could examine the nose, throat, and even the eye fundus.......However, in modern medicine the word "Endoscope", is applied to the long flexible tube used in other specialities, such as Gatroenterology, ENT etcetera.....and since endoscopy is nowadays an independant spaciality.....the word is used for that and NOT for the old and anachronic apparatus the we used to carry, like a headband around the head....

You can usually also refuse to allow student observers, but this may vary from one hospital to the next. I would just ask your doctor about it.

Medical shools have what are called operating theaters with galleries above them where surgical students can watch surgeons perform on patients. (This is done with the consent of the patient.)

If there is a medical school near you, you might write to them and ask if it is possible to arrange to be in the observers gallery of an operating theater when surgery is performed. Perhaps if your school were to arrange it, it might be a field trip.
