It seems mainly that the acetic acid affects the digestion of other things and slows or alters absoprtion of other nutrients in the body. The vinegar itself has little to no vitamin, mineral, or other USDA recognized factors needed in the daily nutrion of adults.

Most ACV that is not organic is Apple Cider FLAVORED vinegar and is not a true fermented product but rather the result of a industrial chemical process (just look at the label-all store brand and Heinz ACV are a mix of grain vinegar and AC flavoring)

The organic Apple cider vinegars are produced through natural fermentation and use actual apple cider to make the vinegar.

So yes, big differences between the two

Apple cider vinegar is made from a "mother" or a concentrated ferment of dead yeast cells and bacteria that have "blown out" their alcohol content. Similiar to proofing yeasted dough for 12 hours to finish the fermentation process. With bread, any proofing less than 12 hours does not lead to finished fermentation and leads to the bread completing its fermentation in the gut. The apple cider "mother" forms as a scum on the fermentation of the apples and provides the "base" for the next batch of vinegar.

Other vinegars such as balsamic are fresh ferments and there isn't any carry over of nutrients, yeast and bacteria from batch to batch which is why apple cider has its reputation as being a healing vinegar.

Some people swear by it. Most of the people I polled said that it does nothing BUT they were all low carbers AND didn't include honey (not as a sweetener but for the gluconic acid). I have been making Kombucha tea since January (I don't know about health claims yet but I feel it doing something) and it's basically acetic acid & gluconic acid the same make up of apple cider vinegar and honey.

One lady said her mother in law was literally transformed in 30 days - lost weight, hair grew, she looked 20 years younger. I tried adding it to my diet but I hit overload with the Kombucha tea already in my diet. I sure don't recommend mixing the two.

Dr.Jarvis folk remedy included 2 tsp. raw apple cider vinegar & 2 tsp. raw honey with lunch & dinner.

I would highly suggest kombucha tea. It uses real sugar but the yeasts and bacteria transform the sugar and tea into beneficial acids (acetic and gluconic and glucoronic precursors). I have been drinking it and brewing it since January - it's just sugar sweetened tea that is converted with a "SCOBY" so it only costs a few cents to make. I started it for the health benefits (can't really attest to any at this point) but continue it for the "soda pop" like taste and naturally occurring carbonation. I am highly sensitive to sugar (I get bacterial infections) and caffeine but I can drink a couple of liters of this a day with no problems. (I do brew it to the sugar free stage to make sure though) It's all rather weird and scary but you might want to stop by a health food store and sample GT's Kombucha tea (do not try Carpe Diem brand, it is nasty). It's not cheap at $4 bottle but you can brew it cheap yourself if you like it.

Acetic acid is found in vinegar. Yes, what you use on salads and vegetables. Touted in folk remedies, vinegar actually does have some benefits. Through the ages, vinegar has been used to increase appetite, offset fatigue and boost mineral absorption. Vinegar increases the absorption of calcium and, in animal studies, vinegar has been shown to augment glycogen formation--therein lies "offsets fatigue." Vinegar may help prevent fatigue by improving the body's ability to load carbohydrates into muscles (rather than allowing the carbs to flow into fat-storing pathways, which contributes to a lack of energy and vitality).
