You'd definitely want to take Anatomy & Physiology and any other advanced biology courses your school offers. Chemistry is good, too, since a knowledge of it is required for some of medical school. Any advanced or AP science courses would be good, especially lab courses.

If your school offers Latin, that would be an excellent choice since it would help you to understand more of the medical terminology.

You might also consider looking into volunteering at a hospital or nursing home or some other medical facility. You'd probably get stuck doing a lot of dirty work, but it would definitely show an interest in medicine. (And it would help you to meet people in the field. Getting to know people in the field and getting letters of recommendation from them can help a lot in getting into medical school and in getting a job later on.)

Medical schools will definitely love your diverse background. When they are looking at your GPA they look at it in 2 ways: your overall average GPA, and your science GPA alone. If you have a 3.3 science GPA, that might not be good enough, as medical schools are getting more competitive to get into every year. Schools will also want to see medical experience - meaning volunteering at a local hospital or clinic. Also, research is important at top schools. Wherever you take your science classes, try and get some research in as well. Overall, you have a great story, just the kind of story that I like to hear when I interview applicants...so try hard, get the grades, and join in a career you love.

UC schools are all excellent schools. To qualify for a nurse there are several levels. LPN only requires one year of undergraduate training. RN requires 4 years.

BTW, if you are only a sophomore now.. study harder and try to become a doctor.. you'll be more empowered. for a Doctor, you need minimum of 3.3 GPA in college with MCAT testing..
