It depends on the type of degree. When you say "university," I'm assuming that you're talking about what we in the US call a bachelor's degree? If you've completed a master's, there are many jobs in the public health sector, especially within NGOs (or charities, as they are called in the UK) that would welcome your training. Master's level training is looked at favorably within the NGO world, particularly if the institution that employs you wants to carry out qualitative, ethnographic research within communities, or want to turn a critical eye to its own programs.

The bachelor's degree might make this job search a bit more challenging. You can establish yourself by working as an intern or program assistant within one of these charities, or at a university. You would gain excellent, marketable experience this way. Working with a more experienced medical anthropologist would also benefit you; this is something that helped me. Of course, I had a master's of public health when I met this particular mentor (and now have a PhD in anthropology), but I would not have gotten to any of these points in my career without the help of a whole host of medical anthropology mentors.

In the US many medical school candidates get their experience through volunteer opportunities such as a candy stripper at a local hospital, a position with the Red Cross, or a children's or low-income health organization. There are also part-time positions available in doctors offices as assistants or at local universities as laboratory technicians.

Try and find a firm that will sponsor you to come over for a job. They will not hire you if you travel on a tourist visa and then search there. Of course, there is always under the table private practice work, but you have to find that on your own and it doesn't really pay well.
