Is there any particular aspect of holistic medicine you want to branch into or generally?Alternative or conventional?
A back ground in engineering is not suitable to go on to do a Masters in medicine of any sort. A university that would let you do this is one that I wouldn't want to go to and a course i wouldn't want to undertake.
Either way a masters in holistic medicine is likely to be purely academic and will not qualify you to practice any form of medicine.
What are you trying to achieve?
If you actually want to practice a form of medicine decide what that is, train as that and practice it holistically. An academic qualification in its own right will not help you do this.
Edit: From what you want to achieve it sounds like Naturopathy or Herbalism would be suitable for you. There are plenty of courses available in the US and the UK but i don't know if any of them will take you through the Masters level in 2 years with your current background.

Not the greatest idea if your aim in life is to help people, the latest 2 controlled scientific studies that looked into acupuncture yielded identical interesting results results.They showed that 70% of patients given acupuncture appeared to gain some benefit. This sounds great until you look at the placebo group in the study,who where 'managed' with random needle sticks. 70% of them appeared to report improvement as well!
This clearly demonstrated that acupuncture is a placebo, a very potent one, but clearly a placebo.
Also holistic medicine is NOT acupuncture anyway! Holistic medicine (medical care of the whole person considered as subject to personal and social as well as organic factors) "holistic medicine treats the mind as well as the body". Many types of practitioners use varying techniques in order to put this into practise,notably the better among GPs!

Acupuncture is an acknowledged and respected field of medicine, and most states, provinces and countries requires formal training and certification. In particular, the United States has rigorous training standards for acupuncturists. Most states require a 4-year Masters degree in Acupuncture (MSAC) or Traditional Oriental Medicine (MSTOM) from an accredited acupuncture school. In addition, an acupuncturist must pass written and practical state and/or national board exams in order to become licensed. You will need a Bachelor's degree (BSN or BS in Nursing). After graduation, you will take the NCLEX or nursing boards and when you pass you will have your RN license. I think it's good to have at least a year or two of nursing experience before going for your Master's (nurse practitioners have Master's degrees) but many go right into the MSN and some schools offer a dual degree BSN/MSN. You can find a list of programs at the American Holistic Nursing Assn (ahna.org).At least that's how it worked at my nursing school. Good luck!
