If you are interested in being a doctor, specialties that might interest you would be:
Orthopaedic surgery: surgery on bones and joints. No abdominal or major organ surgery.

Dermatology
Rheumatology
Physical Medicine & Rehabilitation
These are specialties that have very few "911" emergencies

I think you have part of the answer already. You thought you liked nursing but once you looked closer, you did not like it as much anymore. The same thing may happen with all the other choices you have suggested. Your best bet is to take a closer look into each and every one of them.
Do not worry about being in school till the age of 28. I went to work after undergrad and much later decided to go back for a master's and later a PhD. The time wasted has not been the time in school but the time outside of school because I was not doing what I love to do.
Find someone for each profession that you may be interested in and ask them for an informational interview and ask what they do on a typical day, what they like and don't like about their jobs, etc.

Get some family members and friends together and hold an intervention. She needs professional help and can't keep sucking you dry. It's for her own good.

I'm sorry to hear about your mother. I really am. Yes, addiction is bad and yes, it does take up a hell of a lot of hospital time, money and resources but the reason people are addicted to substances is because they feel they have no other way to cope. If there was more compassion, understanding, support and communication for people who are suffering in the world, maybe there is a chance situations such as the one you have just described do not come to such a tragic conclusion. Nurses unfortunately are under a terrible amount of stress and strain and to them, it is just 'another case'. Try not to take it too personally. (I know it must have been hard to hear.)

Dave, you aren't perfect I'm quite sure and you don't know everything. (Even if you think you do). You are the worst example of how society ruthlessly stereotypes people without a single ounce of consideration for what people have been through or experienced. I certainly hope you don't end up on a sticky wicket yourself. You might not receive the help and support you feel you deserve one day. You are not impregnable by any means and you are no better than anyone else. In future, think before you speak.

You can pick both! Seriously, you seem to love both careers, and they complement each other nicely.

As for which to pick first, I'd say nursing. Once you're working, you can start a parallel career as a teacher.

I happen to know several nurses who are also teachers (mostly college lecturers), and they excel in both.

That is mostly the job of a CNA. When I say "mostly" there are plenty of times a good nurse will roll up the sleeves, don the gloves, and wipe someones @$$. Besides, you can't pawn off the task of giving suppositories to the CNAs.
If you can't handle the dirty work, find a job outside the health care profession.
