psychology is a good undergrad degree for OT, plus you can use that as an undergrad for several other health care degrees. It really depends on what you want to do, are you really planning on becoming an OT or do you want to go into economics? I mean, once you get that degree, its hard to go back and do something totally different, and costly.I suggest you call a hospital or clinic and do a job shadow under an OT before you decide for sure, that way you will have an idea of what an OT does on a daily basis.
Some good undergrad degrees for health care in general are
psychology
health science
nutrition
kinesiology

I am sorry to hear about the challenges you are facing but kudos to you for seeking help and not giving up. Here are some suggestions:-Try contacting gov't agencies about training programs, the Social Security Administration about disability benefits and folks in the local area (like your Occupational Therapist) about for ideas about possible employers or jobs. Medicaid may even have a program where you can get paid for assisting your boyfriend's grandmother in the home.
-Contact the health providers, explain your situation and ask to set up a payment plan. Suggest a weekly or monthly amount that you can cover even if it is just a few dollars at time. Often they will give you time if they see a pattern of repayment over a period of time.
-If all else fails, consider bankruptcy as a way to start over and rebuild. It is not ideal but it could be an option at some point.

He really really needs to check out the medical council of new zealand's website and speak to someone there. It is not a quick process and every once in a while stories appear in newspapers about overseas trained doctors finding it difficult to become qualified in NZ. The reason for this, i understand is because they come from countries not automatically 'approved' therefore they have to go through the next step of registration (third link)
