I would think to take biology and anatomy and physiology in high school. Perhaps psychology and/or human behavior as well. (Please do consult with your guidance counselor and/or the school(s) that you are interested in attending for speech pathology.) Those are usually courses that need to be taken in college as well as prereq's for the speech language pathology (slp) program. It's also a good idea to ask a slp is you can perhaps observe them in therapy (with permission from the patient :) I found out that it wasn't for me by observing. There are different populations, as I'm sure that you realize, including children and older adults/geriatrics.

The best work experience might be in a speech-language pathology practice. See if any in your area are hiring assistants or receptionists etc.If that's not possible I would get a job working with the type of client you see yourself working with as a speech-language pathologist. For example if you like toddlers, see if you can get a job at a daycare or preschool setting. If you like older adults, apply at a nursing home.

I don't know how bilingual & dysfluency assessments are conducted or what requirements that places on the camcorder. Could you give some more detail about your work flow e.g. where and how these assessments are done and why you need to video them in the first place?<edit>
One important question - what are you going to do with the video once you've transcribed the audio? Will it be deleted or kept? If it's kept, for how long? Different question - if you're mainly concerned about the audio, why not get a field recorder such as the Zoom H2 rather than a camcorder?
