see if you can become a speech languge pathology assistant and that way when you go back to graduate school, you will have experience. That's what I'm doing.

Our rehab facility for people with disabilities can usually use good AAC and cog people!

You're going to have a really rough time trying to find a speech pathologist who has the time to have you tag along. Having had tag-alongs myself, I can vouch for the fact that they took a TON of time away from doing my job.
One problem is that in a health-care setting, patient confidentiality policies prohibit an unlicensed person from participating in therapy sessions, and that goes for hospitals, nursing homes, and clinics unless you get special written permission from the patient or the patient's family.
As far as volunteering goes, you may want to check with the public schools in your area, the speech clinic at your university, or possibly the outpatient clinic at a public (i.e., county) hospital. Outpatient services are easier to fit a volunteer into.
