I have two friends starting their masters degrees in speech therapy this year.They both majored in psychology and minored in biology. And they both did honours research in a speech related area. (One friend applied last year without her honours and didn't get in.)
The best idea, though, would be to look at graduate programs you're interested in. You can look at their prerequisites, but you can also look at the research they're currently doing (try to read any publications you can). This will give you an idea of the courses you can take that will make you look *really* good to that school.
